1.5 lbhalloumi
1red onion
200gtomatoes
1eggplant
1 cuppita bread
to tastecumin
to tastetahini
3 tbspolive oil
to tastesalt and black pepper

Instructions

Prep all ingredients: chop red onion, tomatoes, eggplant and measure out the cumin.

Season the halloumi with salt and pepper, then bake over medium-high heat until well browned, about 8 minutes.

Add red onion, tomatoes, eggplant to the pan and cook until softened, 5 minutes.

Stir in cumin, tahini and cook for another 1 minutes until fragrant.

Meanwhile, prepare the pita bread according to package instructions and set aside.

Combine everything in the pan, reduce heat, and let simmer for 5 minutes so the flavors meld.

Taste and adjust seasoning with extra salt, pepper, or a squeeze of citrus if needed.

Serve hot, over pita bread, garnished with fresh herbs.
