Thanksgiving-style mashed sweet potatoes topped with marshmallow and pecan streusel.

Ingredients

1.5kgsweet potatoes

60gbutter

3 tbspbrown sugar

100mlwhole milk

2eggs

1 tspvanilla

1 tspcinnamon

100gpecans, roughly chopped

75gbrown sugar for topping

50gbutter for topping

100gmini marshmallows

Instructions

Bake sweet potatoes at 200°C until soft. Scoop flesh.

Mash with butter, sugar, milk, eggs, vanilla and cinnamon.

Spread in a baking dish.

Mix pecans, brown sugar and butter — scatter over.

Top with marshmallows.

Bake at 190°C for 25 minutes until marshmallows are toasted.
