Prep all ingredients: chop swede, peas and measure out the wholegrain mustard.

Season the lamb shoulder with salt and pepper, then sear over medium-high heat until well browned, about 5 minutes.

Add swede, peas to the pan and cook until softened, 7 minutes.

Stir in wholegrain mustard, gravy, mature cheddar and cook for another 1 minutes until fragrant.

Meanwhile, prepare the suet dumplings according to package instructions and set aside.

Combine everything in the pan, reduce heat, and let simmer for 15 minutes so the flavors meld.
